This project developed an innovative range of products based on long-lasting cut fruit, as well as the technology necessary for its production and commercialisation in the refrigerated dsiplays of different supply channels (HORECA, vending machines and retail), aiming to promote consumption of this type of product among different groups of the population (children, pensioners, etc.).
The project designed methods of lasting preservation for many types of fruit to eliminate its seasonality and influence and improve its price. To do so, the consortium focused on preparing the fruit through refrigeration, water activity control, stabilising temperature and moisture, concentration of solutes, etc.
An effective method was individual quick freezing, using different mixtures of gases. SP GROUP provided the know-how needed to develop the right kind of films for each type of fruit and process. These films were provided in functional formats that ensured the preservation process, consumption and food safety of the products were optimum.
